Chemical Structure of Water-Soluble Alpha-Glucan in the Fruit Body of Grifola Frondosa

Alpha-glucan composed of only D-glucose was extracted with boiling water from the fruit body of Grifola frondosa ( maitake ) and purified through the columns of DEAE-cellulose (borate form) and Sepharose CL-4B. The polysaccharide was found to be a glycogen-type from the results of methylation study and enzymic hydrolysis. About 1.3 ~106 of weight-average molecular weight and 5~40 alpha-1,4 linked unit chains were revealed by gel chromatography of pullulanase and isoamylase digest of the polysaccharide.
